POTATO PANCAKES


            16-ounces shredded frozen potatoes (dry on paper towels)
            1 small chopped onion
            
3 eggs
            
Pepper and salt
            
Olive oil
            Sour cream
            Dill


Sauté the onion in a skillet.

Meanwhile, beat the eggs and mix with the potatoes; add onions. Form potatoes into size desired and fry until golden. Serve with sour cream and fresh dill.
