BREAD AND TOMATO SALAD
Panzanella


            
½ loaf crusty Italian bread, cut into cubes
            2 ripe tomatoes, cut into cubes
            1 medium red onion, chopped
            
½ cup Colavita Extra Virgin Olive Oil
            1 tablespoon balsamic vinegar
            
¼ cup chopped fresh basil
            Freshly ground black pepper, to taste
            Salt to taste (optional)

Serves 6

In a large bowl, combine the bread, tomatoes, and onion. In a separate bowl, mix the Colavita Extra Virgin Olive Oil, vinegar, basil, pepper, and salt. Add the dressing to the bread and tomato mixture and toss lightly. Let stand 15 to 20 minutes, toss lightly again, and serve.
