2/3 cup uncooked long grained rice
2/3 cup thin spaghetti broken into
2 inch pieces
1/3 cup
Colavita Extra Virgin Olive Oil
3 cups chicken stock
1 cup fresh or thawed frozen broccoli florets
¼ teaspoon dried thyme, crushed
2 cups cooked turkey, cut in julienne strips
½ cup sliced scallions
¼ cup chopped walnuts
¼ cup diced red pepper

In a saucepan,
sauté the rice and spaghetti in Colavita Extra Virgin Olive Oil until golden, stirring often. Add the chicken stock and bring to a boil.
Add the broccoli and thyme. Cover and simmer 15 minutes, or until rice is tender, stirring occasionally. Add the remaining ingredients and heat through.
