4 large fillets of turkey
Soy flour (approximately 1½ cups, more if needed)
tablespoons Colavita Extra Virgin Olive Oil
tablespoon unsalted butter
cup chopped red onion
jalapeño pepper, finely chopped
cup white wine
cups sliced fresh fruit (nectarine, peaches, apricots, cherries,
plums, kiwifruit, or any combo)
tablespoons fresh lime juice
Salt to taste
Freshly ground black pepper
tablespoons chopped fresh cilantro
Dust fillets with soy flour. In a medium skillet, gently sauté the fillets in the Colavita Extra Virgin Olive Oil and butter until cooked. Remove to a warm platter.
Add onion and jalapeño (and additional oil, if needed), sauté until soft. Add wine to skillet scraping the bottom of pan. Reduce to half. Add fruits, lime juice, salt, pepper and cilantro.
Cook 5-7 minutes. Serve over turkey fillets.
