CHINESE PASTA WITH TURKEY
On a Chinese menu you will see various lo mein dishes. “Mein” means noodles made from wheat, whereas “fun”, as in chow fun, is the designation for noodles made from rice. You can skip the first step and use leftover cooked turkey (about 2 cups)

Three 4-ounce turkey cutlets

cup all purpose flour

tablespoons Colavita Extra Virgin Olive Oil

tablespoons cornstarch
3
tablespoons water
1
teaspoon sugar

tablespoons light soy sauce
1
pound vermicelli
1
medium carrot, cut into matchsticks
1
clove garlic, chopped
1
cup chicken stock
2
cups fresh bean sprouts
Serves 4 to 6
Dust the turkey with flour. In a medium skillet, sauté the turkey in the
Colavita Extra Virgin Olive Oil. Remove the turkey when cooked. Cut
into strips, and set aside. In a small jar, shake together the
cornstarch, water, sugar, and soy sauce. Meanwhile cook the pasta.
Add the carrot and garlic to the skillet and sauté for 1 to 2
minutes. Add the chicken stock, then add the cornstarch mixture and
cook until the mixture thickens. Add the bean sprouts and return the
turkey to the skillet and heat through. In a large bowl, combine the
pasta and turkey mixture and toss well. Serve. |
