PUMPKIN PECAN BREAD PUDDING


            10 slices whole grain bread (days old is best*), cut into cubes
            2 eggs, slightly beaten
            ½ cup brown sugar
            ½ teaspoon ground nutmeg
            ½ teaspoon pumpkin pie spice
            1 teaspoon vanilla extract
            2 cups canned pureed pumpkin (not pumpkin mix)
            2¼ cups milk
            ½ cup chopped pecans

*Can put in oven on cookie sheet to dry out bread.

Serves 6 to 8

Put bread cubes into buttered oven pan. Whisk next six ingredients, then whisk in milk; pour over bread. Push down bread to soak up mixture and sprinkle pecans over the top.

Let stand 30 minutes and back at 350°F for 1 hour and 15 minutes.
