I love the cracklin' taste of a good fish cake in which the fish is the main ingredient, and that's why I love Josie's recipe. The blend of flavors is just right, and they are fried in Colavita extra virgin olive oil, which adds even more flavor.
2 pounds any white-fleshed fish, cooked and flaked
1 small onion, minced and cooked
2 cups mashed potatoes
4 large egg whites
1 tablespoon fresh lemon juice
3 tablespoons mayonnaise
2 tablespoons drained small capers
teaspoon dried thyme
teaspoon white pepper
cup bread crumbs
Colavita extra virgin olive oil for frying
Serves 4 to 6.
Mix all the ingredients together except the bread crumbs and Colavita extra virgin olive oil. Form into 8 large patties and dredge in the bread crumbs to coat.
In a large skillet, fry the fish cakes in Colavita extra virgin olive oil, turning once, until golden. Drain on paper towels.
