Small Onion, chopped
cup Colavita Extra Virgin Olive Oil
35-oz. can Italian Plum Tomatoes with their juice
pinches Dried Basil
pinch Dried Thyme
Freshly Ground Black Pepper to Taste
oz. Tomato Paste (optional)
oz. Water (optional)
lb. Pasta of your choice
In a large skillet, sauté the onion and garlic in the oil for about 5
minutes. Chop the tomatoes coarsely and add with their juices to the
skillet. Add the salt, basil, thyme and pepper. Cook, covered, for 10
minutes; stir and cook, uncovered, for another 20 to 25 minutes.
If you like a thicker sauce, add the tomato paste and water with the
tomatoes. While the sauce is simmering, begin cooking pasta. When
ready, serve the sauce over the pasta.
