1 pound spaghetti cooked and well drained
1 tablespoon olive oil
6 large eggs or 10 large egg whites, lightly beaten
1 small onion, chopped
cup grated Parmesan cheese
8 ounces pepperoni, chopped
teaspoon white pepper
cup chopped fresh Italian parsley
Salt to taste (optional)
Serves 6 to 8
Preheat the oven to 350° F. Oil a square baking dish.
In a large bowl, combine the cooked spaghetti, olive oil, beaten eggs or egg whites, chopped onion, Parmesan cheese, pepperoni, white pepper, parsley, and salt. Mix thoroughly. Pour into the dish and bake 45 to 50 minutes or until lightly brown on top.
