pound bow tie pasta
1 tablespoon Colavita Extra Virgin Olive Oil
1 tablespoon unsalted butter
2 tablespoons all-purpose flour
2½ teaspoons curry powder
1 tablespoon fresh lemon juice
1 cup chicken stock
1 cup heavy cream
1 to 1½ pounds cooked turkey or chicken, cut into pieces
Cook the pasta.
In a large skillet, heat the Colavita Extra Virgin Olive Oil and butter over low heat and blend in the flour to make a roux. Stir in the curry powder. Gradually blend in the lemon juice and stock, stirring constantly. Raise the heat to medium and continue cooking until the volume is reduced by half. Add the cream and cook until the mixture thickens.
Reduce the heat to low, add the turkey or chicken meat, and continue simmering for about 10 minutes. Toss with the bow ties and serve.
