medium onion, chopped
red bell pepper, seeded and chopped
10-ounce package frozen lima beans
thick (˝ inch) slice of ham, chopped
tablespoons Colavita Extra Virgin Olive Oil
15 ½ ounce can corn kernels, dry packed,
or kernels from 3 ears of corn
cup chicken stock
teaspoon ground turmeric
teaspoon crushed red pepper
Salt to taste (optional)
Freshly ground black pepper to taste
Serves 4 to 6.
In a large skillet, sauté the onion, bell pepper, lima beans, and ham in Colavita Extra Virgin Olive Oil until the vegetables are soft. Add the corn, chicken stock, and sauté for 2 to 4 minutes.
Meanwhile, cook the pasta.
Add the turmeric, crushed red pepper, salt, and pepper. Add the cooked orzo to the skillet and stir to combine well. Serve.
