PLEASE REALIZE:  Raw eggs MAY contain salmonella bacteria, so look for pasteurized products.

Normally, due to the amount of e-mail we get, it is impossible to answer everyone BUT Happy New Year!!

           12 eggs
½ lbs. superfine sugar
½  tablespoons ground cinnamon
½  tablespoon ground cloves
½  tablespoon ground Allspice
¼  cream of tartar
           4 ounces dark Jamaican rum
           1 liter bottle brandy OR bourbon OR rum
           Boil watery milk or coffee

Separate eggs.

Beat yolks with 2 lbs. sugar, reserve remainder, and blend with cinnamon, cloves, allspice until smooth and creamy.  SET ASIDE.  Add rum gradually, stirring constantly.

In another bowl, beat egg whites with pinch of cream of tartar until soft peaks appear, then beat in remainder of sugar mixture until peaks stiffen.

FOLD whites into yolk mixture, this batter is the BASIS of each individual serving.

When ready:

Scald a mug and put ladleful of batter in cup.  Add 2 ounces of brandy or bourbon or rum, or any combo.

Fill mug with boiling water or milk and sprinkle nutmeg.
