2 pounds sweet potatoes, peeled
2 cups whole milk
3 tablespoons sugar
¼ cup chocolate syrup
½ cup raisins
1 tablespoon unsalted butter
1 teaspoon vanilla essence
Boil the sweet potatoes. When cool, pureé in food processor.
Meanwhile, scald milk and stir in sugar, chocolate syrup, raisins, and then add pureéd sweet potatoes. Cook until thickened, and add butter. Continue stirring. Remove from heat, stir in vanilla. Serve chilled.
