BANANA-BLUEBERRY SPLIT CAKE


            1 cups Colavita Extra Virgin Olive Oil
            2 cups Splenda Granular
            1 teaspoons vanilla
            3 eggs
            3 cups flour
            1 teaspoon baking soda
             teaspoon salt
             cup pecans, chopped
            1 cup fresh or frozen thawed blueberries
             cup buttermilk
            2 bananas, mashed

Serves 8

Preheat the oven to 325 F.

In a large bowl, mix the
Colavita Extra Virgin Olive Oil, Splenda Granular, vanilla and eggs. Stir in the flour, baking soda, and salt, and mix well. Mix in the pecans and blueberries. Add the buttermilk and bananas and mix thoroughly.

Bake in a greased tube pan for approximately
1 hours.
