cup thin spaghetti, uncooked and broken into 2-inch pieces
cup uncooked long-grain rice
cup Colavita Extra Virgin Olive Oil
cups chicken stock
cup fresh or frozen and thawed broccoli florets
teaspoon dried thyme, crushed
cup cooked chicken breast, cut into julienne strips
cup sliced scallions
cup chopped walnuts
cup diced red bell peppers
In a medium saucepan, sauté the spaghetti and rice in Colavita extra virgin olive oil until
golden, stirring often. Add the chicken stock and bring to a boil.
Add the broccoli and thyme. Cover and simmer 15 minutes, or
until the rice is tender, stirring occasionally. Add the remaining
ingredients and cook until heated through, stirring occasionally. Serve.
