CHICKEN PASTA PILAF

Years ago, when I first demonstrated this recipe on national television, I received thousands of requests -- to date eight million requests have been filled.


            1 cup thin spaghetti, uncooked and broken into 2-inch pieces
            
½ cup uncooked long-grain rice
            
cup Colavita Extra Virgin Olive Oil
            3 cups chicken stock
            1 cup fresh or frozen and thawed broccoli florets
            
¼ teaspoon dried thyme, crushed
            1 cup cooked chicken breast, cut into julienne strips
            
½ cup sliced scallions
            
¼ cup chopped walnuts
            
¼ cup diced red bell peppers

Serves 4.

In a medium saucepan, sauté the spaghetti and rice in Colavita extra virgin olive oil until golden, stirring often.  Add the chicken stock and bring to a boil.  Add the broccoli and thyme.  Cover and simmer 15 minutes, or until the rice is tender, stirring occasionally.  Add the remaining ingredients and cook until heated through, stirring occasionally.  Serve.
