PEANUT BUTTER PASTA


            ¼ pound pasta rings, cooked and cooled
            8 ounces ricotta cheese
            ½ cup dark raisins
            ¼ cup sliced almonds
            ½ cup grape jelly
            2 tablespoons water
            ½ cup creamy peanut butter


Serves 4 to 6

Mix the cooked pasta with the ricotta cheese, raisins, and almonds. In a small saucepan, add the jelly and water, stir in the peanut butter, and heat until warm. Drizzle heated peanut butter sauce over top of individual pasta servings.

Serving recommendation: Serve with slices of fresh, crisp apples and peas and orange sections.
